{"id":226,"date":"2011-04-15T22:11:33","date_gmt":"2011-04-15T22:11:33","guid":{"rendered":"http:\/\/norikoburky.com\/?p=226"},"modified":"2011-04-25T12:20:07","modified_gmt":"2011-04-25T12:20:07","slug":"popcorn-chicken-with-gorgonzola-dip","status":"publish","type":"post","link":"https:\/\/norikoburky.com\/?p=226","title":{"rendered":"Popcorn Chicken with Gorgonzola Dip"},"content":{"rendered":"<p style=\"text-align: center;\">Thank goodness it is getting easier each day to wake up in the morning because of the weather.\u00a0 Every morning, out of habit, I still swear to my bed who has just lost its owner that I would come back later for 20 minutes of indulgent comfort.\u00a0 However, a quick glance at the blue sky through my kitchen windows with white airbrush-like jet lines is startling enough to perk me up.\u00a0 It&#8217;s funny, no matter what kind of weather it presents outside, I am convinced that it is perfect weather for a cup of hot coffee, looking outside every day.<\/p>\n<p style=\"text-align: center;\">Let&#8217;s move on to food talk.\u00a0 Today was my big grocery shopping day of the week.\u00a0 Not that I do this once a week -I&#8217;m rather a daily shopper who finds herself wasting more money on unnecessary things if she tries to purchase for a week-long menu.- just it was a day that the store I have been a long-time customer had fresh vegetables, and I needed to buy a lot of other stuff in my &#8220;to-buy list&#8221;.<\/p>\n<p style=\"text-align: center;\">The problem at times like this is that there are too many choices as to what to cook with a refrigerator full of stuff waiting to be presented beautifully.\u00a0 Should I make the Mexican Samosas that I was thinking of last night?\u00a0 What about the spinach recipe which I luckily came across while reading blogs?\u00a0 After thinking it over for several minutes in my head, I remembered the chicken stick recipe one of my girlfriends shared with me the other day.\u00a0 Cut chicken breast into strips and fry after coating -this part is her very her own creation- in croutons.\u00a0 That&#8217;s it!\u00a0 Sounds like a recipe my son is going to dive into!<\/p>\n<p style=\"text-align: center;\">&nbsp;<\/p>\n<p style=\"text-align: center;\"><a href=\"http:\/\/norikoburky.com\/wp-content\/uploads\/2011\/04\/PC3.jpg\"><img loading=\"lazy\" class=\"aligncenter size-full wp-image-228\" title=\"PC3\" src=\"http:\/\/norikoburky.com\/wp-content\/uploads\/2011\/04\/PC3.jpg\" alt=\"\" width=\"500\" height=\"750\" srcset=\"https:\/\/norikoburky.com\/wp-content\/uploads\/2011\/04\/PC3.jpg 500w, https:\/\/norikoburky.com\/wp-content\/uploads\/2011\/04\/PC3-200x300.jpg 200w\" sizes=\"(max-width: 500px) 100vw, 500px\" \/><\/a><\/p>\n<p style=\"text-align: center;\">You must be wondering how chicken sticks turned out to be so popcorn-y like those.\u00a0 Right before starting to cook, I was flipping through &#8220;&#8221;Food and Wine&#8221; Enjoy with the rich and chunky Gorgonzola dip!<\/span><\/div>\n<div class=\"ERIngredientsHeader\">Ingredients<\/div>\n<ul class=\"ingredients\">\n<li class=\"ingredient\">1 boneless skinless chicken breast<\/li>\n<li class=\"ingredient\">1 egg<\/li>\n<li class=\"ingredient\">salt &amp; pepper<\/li>\n<li class=\"ingredient\">1 cup plain bread crumbs<\/li>\n<li class=\"ingredient\">canola oil for frying<\/li>\n<li class=\"ingredient\">1\/2 cup crumbled Gorgonzola cheese<\/li>\n<li class=\"ingredient\">1\/4 cup sour cream<\/li>\n<li class=\"ingredient\">1\/4 tsp lemon zest<\/li>\n<li class=\"ingredient\">1 Tbsp lemon juice<\/li>\n<li class=\"ingredient\">2 tsp dry chopped chive<\/li>\n<\/ul>\n<div class=\"ERInstructionsHeader\">Instructions<\/div>\n<div class=\"instructions\">\n<ol>\n<li class=\"instruction\">Cut chicken breast into small pieces.<\/li>\n<li class=\"instruction\">Break egg in a bowl, add salt &amp; pepper, stir well.  Soak the chicken pieces in the egg.<\/li>\n<li class=\"instruction\">Prepare bread crumbs in another bowl.  Put the chicken pieces in bread crumbs after draining excess egg.  Coat bread crumbs on every piece of chicken by tossing by hand.<\/li>\n<li class=\"instruction\">Heat canola oil in a frying pan or a 3qt. pot about an inch deep.  Fry chicken pieces over medium-high heat.  Drain excess oil on a paper towel.<\/li>\n<li class=\"instruction\">Now, prepare the dip.  Combine crumbled Gorgonzola cheese, sour cream, lemon zest, lemon juice and chive in a heat resistant bowl.  Cover it with wrap, microwave it for 40 seconds on high. cooking tiny pieces of meat is that you don&#8217;t have to worry about not having them cooked through.\u00a0 (I haven&#8217;t quite completely recovered from the traumatizing <a href=\"http:\/\/norikoburky.com\/?p=98\" target=\"_blank\">drum stick incident<\/a> from the other day&#8230;) It takes only a few minutes on each side before they become golden brown and meat is well-done by that time. \u00a0 Also being able to\u00a0 consume the hole package in a bite works so well for my son with braces.<\/p>\n<p style=\"text-align: center;\">&nbsp;<\/p>\n<p crumbled cheese in my refrigerator that comes in a plastic container with a resealable lid.\u00a0 Gorgonzola, Bleu cheese and Feta are commonly placed in the dairy product isle of most supermarkets.\u00a0 They are quite affordable and come in handy for topping off simple green salad, sprinkling over tomato sauce, etc&#8230;<\/p>\n<p style=\"text-align: center;\">&nbsp;<\/p>\n<p style=\"text-align: center;\">American bread crumbs are almost interchangeable with Japanese Panko but more grainy and coarse.\u00a0 I like having options on which one to use depending on the crunchiness you are looking for.<br \/>\nThe chicken came out as juicy and tender as I hoped for.\u00a0 It was hard to stop munching as I cooked.\u00a0 That&#8217;s how my dishes, all the time, turn out smaller in portion than they are supposed to be.<\/p>\n<p style=\"text-align: center;\">&nbsp;<\/p>\n<p style=\"text-align: center;\"><a \/>\nHe came from one of our neighbor&#8217;s when the mommy cat had babies.<br \/>\nHis mom is an indoor\/outdoor cat and we see her sitting in her driveway or sometimes strolling around the neighborhood.\u00a0 It&#8217;s really nice to know that Genji has his mommy so close.\u00a0 I wonder if they would recognize each other if they met after almost two years.\u00a0 It would be nice if
